It is more of a labelling problem than a skill set problem. Most employers label you by your education (fresh graduate) or by your past experience. Most HR and some employers also have no idea who to evaluate technical skill so do it by the laziest possible.
It is like patients choosing to see Dr Watson instead of Sherlock Holmes even though both may have the same medical knowledge.
It is also why I have a problem telling a polymath and a braggart in a short meeting.
