I think that tasting menu should never sold to the public as a meal. Most people want food only when we are hungry. Now I am not saying that people are animals and are dying to eat with their hands or just want to stuff their face into the food.
However, the instinct is not to consider food as anything except a solution to fill a hole. Then do it again in a few hours.
We are not dying to view the food from all angles. We are not interested in identifying all the different smell and flavour.
We are not interested in learning about the history or science or what gave the chef the inspiration.
Our expectation changes the longer we are hungry and the illusion of being able to fill one's belly is not helpful. While I am not happy to have food dumped on the plate, I also prefer my plate to have more food instead of a more aesthetic appearance.
